“Esetra” Ltd., grows different Sturgeon species in the lake of Kardjali which is one of the largest mountain lakes in Bulgaria located on the northern slopes of the Eastern Rhodopes. The big area, volume (595 million m3) and the crystal clear water of the lake are very important for the aquaculture development of the Sturgeon (Acipenseridae) species.
It is the biggest lake in Southern Bulgaria and collects the clear waters of Arda river which is the biggest river in the mountain. The super-intensive aquaculture technology combined with the naturally pure waters guarantees the production of clean, high quality Sturgeon caviar.

Russian sturgeon (Acipenser gueldenstaedtiI) black caviar
Our caviar has a very soft and delicate taste and very strong almond aftertaste. It is derived from Russian sturgeon (Acipenser gueldenstaedtii) grown in our cage farm located in the clear waters of the lake of Kardjali, southern Bulgaria. Available in special tins of 30 g, 50 g, 100 g, 200 g, 250 g, 500 g, 1 kg, 1.8 kg.
Beluga (Huso huso) caviar
Exclusive caviar from Beluga (Huso huso) is renowned for its excellent egg quality and taste. The egg size is 3-3,6 mm in diameter with light to dark grey colour and a fine creamy taste. The caviar is derived from Beluga grown in our super-intensive cage farm located in the clear waters of the lake of Kardjali, Southern Bulgaria. Available in special tins of 30 g, 50 g, 100 g, 200 g, 250 g, 500 g, 1 kg, 1.8 kg.
